1 large potato, cooked and smashed roughly
1 cup chopped greens (cabbage, kale, spinach)
1 boiling onion chopped (or half a small yellow onion)
1 tablespoon butter
2 tablespoons vegetable oil
[1-2 rashers of bacon, chopped] optional
saute onion in butter and oil
if using bacon, rend the bacon in the oil 1st.
add potato and greens
pat down and let fry up until the bottom is crispy
turn it over in sections, not as a whole pancake
Serve when heated through and brown and crispy
I topped it with a poached egg and put some cranberry sauce on the side, but a nice tart chutney or something would be nice.
But then I am not English so what do i know, I was just casting around for something complimentary.
